7 Layers of Fruit Heaven
My husbands family loves to get together and there is always an abundance of amazing food to eat when they do. This weekend being Mother's Day was no exception. I was in charge of bringing a fruit salad. I am no chef by any means, but I do enjoy creating something fun and delicious to share at parties.
After searching online for some new ideas, this is what I came up with. A seven layered fruit salad with French Cream. It was a great success and extremely yummy! This was really easy to make. If you can cut and mix you can do this. Basically, chop up fruit, mix cream, and then layer together. I made enough for about 30+ people so it took me about an hour and a half to chop and put it all together. However most of the fruit can be cut up a few days prior, that will be a huge time saver.

1 Cantaloupe, cubed
2lbs Strawberries, sliced into quarters
4 Peaches sliced or cubed (canned are a good options)
6 Bananas
10 Kiwi's or 1 Honey Dew Melon
6oz. Fresh Blueberries

Tip: slice melons, strawberries and peaches a day or two before, this will cut down your prep time a lot. You can probably do kiwis ahead of time too, but I'm not sure how long they stay fresh for.
To keep bananas from turning brown, peel and slice right before layering fruit together.
French Cream:
1 (8-ounce) cream cheese, softened
1 cup powdered sugar
1 cup whipping cream (liquid)
¼ cup granulated sugar
1 lemon, zested and juiced
1 (8-ounce) cream cheese, softened
1 cup powdered sugar
1 cup whipping cream (liquid)
¼ cup granulated sugar
1 lemon, zested and juiced
Instructions:
Soften cream cheese and then whip with powdered sugar. Whip cream and granulated sugar together until it forms peaks. Combine beaten cream cheese, whipping cream, lemon juice and zest.
Using a clear bowl: Add fruit by layers starting with: Cantaloupe, Strawberries, ½ of the French Cream, Peaches, Bananas, Kiwi (or honeydew)and top with remaining French Cream.
Garnish with Blueberries on top.
